2005 A By Acacia Chardonnay California
ABOUT THE WINE
The fruit for the 2005 A by Acacia Chardonnay was harvested at night and in the early morning to guard the aroma and flavors of the grapes. The grapes were received at the winery and primarily whole-cluster pressed. A combination of oak barrel toasting levels was used to provide complexity. This wine offers aromas of apple, mango, fig and guava. The medium to full-bodied palate maintains impressive balance and flavor concentration, so it will hold its own with rich foods. The flavors of tropical and ripe stone fruits complement its acidity, and the finish is rich and long. You will love this bright and crisp Chardonnay that is perfect for summer afternoons spent with friends out on the patio. Enjoy it with seafood salads, tarragon chicken and coconut shrimp.

August 2007: Sterling Vintner's Collection Chardonay
ABOUT THE WINE: The 2005 Sterling Vintner's Collection Chardonnay is a nicely balanced wine with aromas of pineapple, green apple and flowers, accented by hints of caramel, vanilla and toast. On the palate, it reveals lush flavors of green apple, melon, fig, vanilla and spice with balanced acidity and mouth filling creaminess. Delightful on its own, this wine is also a wonderful complement to poached salmon, grilled chicken, and roast pork with onions and sage.

July 2007 Green Point Wines Chardonnay 2004
A pale straw yellow with green tints. Complex aromas of fresh peaches, grapefruit rind and cinnamon combine with spicy vanillin oak. Stone fruit and citrus flavours develop on the palate and are enhanced by a creamy texture derived from 6 moonths of stirring. Subtle flint and savoury flavours estend the palate and provide a lingering, crisp finish. Cellaring potential is 5-8 years.

June 2007 Dynamite Vineyards 2004 Cabernet Sauvignon
We destemmed and gently crushed the grapes for our Dynamite Cabernet Sauvignon, then fermented them at 86 degrees for 14 days. All of the wine underwent malolactic fermentation. We then aged it for 15 months in mostly American oak barrels, 30 percent of which were new oak. The wine was then filtered and bottled.
This Dynamite Cabernet offers up aromas of black fruit, cassis, chocolate and cedar, followed by flavors of luscious blackberry cobbler, dark chocolate and toffee. The acids are medium-soft, and on the palate the wine is medium-full, with rich, fine-grain tannins and a long, lingering finish. Delicious with steak, the 2003 Cabernet is also enjoyable with roasted game meats and grilled lamb chops.

May 2007 Green Point Wines Shiraz 2004
Blending the regional characteristics from some of Victoria’s premium Shiraz districts has created a complex and balanced Shiraz. The pepper and spice of Yarra Valley meshes wonderfully with the sweeter and supple dark berry flavours from Heathcote and Rutherglen. Overall an excellent example of Victorian Shiraz. A bright garnet red. A complex and intense aroma with hints of white pepper, cloves, caramom and cinnamon which support fragrant ripe blackberry and cherry notes. A full and rich palate of blackberry, licorice and blood plums with peppery hints and suppple, savoury tannins. This wine will develop in bottle over the next 5 -10 years.

April 2007 - Trimbach Pinot Gris Reserve
ABOUT THE WINE
The Trimbach 2003 Pinot Gris Réserve was vinified to complete dryness, with very little residual sugar. We fermented the wine in stainless steel vats with no oak aging. Bottling was done in the spring of 2004 to preserve freshness and aging capability. This classical example of Pinot Gris is probably one of our best. Rich and fragrant, the wine is very ripe and harmonious in style, with juicy yellow peach and ripe pear on the nose. It is full-bodied with ripe, smoky, tropical fruit flavors and a long, slightly nutty finish. Served well chilled, this wine is excellent with sushi, salmon, scallops, veal, chicken, and pâtés. Delicious with spicy dishes, it also makes an excellent aperitif.
